Her research is centered on the innovative and impactful domain of Food and Nutrition, Plant based foods, Functional foods, Nutraceuticals, and Encapsulation. Her primary focus is the development of functional foods with a strong emphasis on transforming food waste into value-added, health-promoting products. This approach not only addresses the double burden of malnutrition but also contributes to promoting a sustainable food chain. Her work also involves the extraction and encapsulation of bioactive components, aiming to improve their stability and efficacy in nutraceutical product development. Her research further extends to animal efficacy trials, providing scientific validation for the nutritional, metabolic, and therapeutic benefits of novel functional and nutraceutical formulations.
